For this building, modelled on a ship anchored onshore, chef-owner Ruairí de Blacam and his wife Marie-Thérèse used De Blacam and Meagher Architects for a design inspired by the islands’ landscapes and terraced limestone to blend into the surroundings. The theme here is slow living – for guests staying overnight there is no TV but rather rods to go fishing and bikes to get around on. The restaurant menu keeps it simple too, with each dish exploring two ingredients or elements grown locally: you may find yourself glancing out through the floor-to-ceiling windows while feasting on lobster with golden beet, John Dory with baby carrot or a raspberry brûlée."
