Just like that candle, their new spot is stylish and impressive, and it’s also a little more expensive than it should be. But if you visit a thousand other restaurants in New York City, you aren’t going to eat anything that even approximates the kind of creative and delicious food that you’ll find here."TimeOut: "Our first course was one of the best dishes we’ve tasted in 2019: scallop ceviche ($22) arrived in a shallow pool of milky, subtly tart leche de tigre with hints of sweetness from the cherimoya (a tropical fruit) and the earthiness of Japanese black sesame. The purple borage petals on top only added to the plate’s allure. As we finished the last bite, my dining companion and I had the same thought: What did we just eat? We were tasting chef Erik Ramirez’s interpretation of Nikkei cuisine, which combines Peruvian and Japanese flavors. It’s not common in New York—yet—but in the past few years, some of Peru’s top restaurants, such as Maido and Sutorīto Māketto, have been recognized across the world for championing this exciting fusion."Eater: "At Llama San, though, the goal is more about making Peruvian food a part of everyday conversation rather than spawning a Nikkei food trend, Ramirez says. “We want Peruvian cuisine and culture to be considered one of the cuisines that people can eat every day,” he adds. Beverage director Lynette Marrero oversees the drink program here, as well as at the other Llama restaurants. Wines are coastal and span several regions around the world, while cocktails are made to match the flavors coming out of the kitchen. A riff on an Old Fashioned is made with raw, unrefined Peruvian sugar and Japanese whiskey infused with Peruvian cacao shells.
